Bacon & Eggs with Avocado
Ingredients
- 2 Eggs
- 4 Bacon Slices
- 1 Avocado
- 1 Tbsp Butter
- Salt & Pepper
Instructions
In a medium size bowl crack and whisk eggs then set aside
Over slow & low heat fry bacon in a large skillet until crispy, place on a plate lined with paper towel to drain excess oil
Cut Avocado in half remove pitted side with a tablespoon, thinly slice and set aside
Now in medium heat skillet add butter then eggs and scramble until lightly done
Plate Soft Scrambled Eggs with Bacon add Avocado
Sprinkle salt & pepper over eggs and avocado
Serve and enjoy!
